Oven Roasted Brussel Sprouts

This simple side dish makes it easy to get in your veggies. Brussel sprouts may not be a crowd favorite, but after trying this recipe, you might change your mind. 

Easy Oven Roasted Brussel Sprouts

Brussel sprouts seem to create a polar response, you either love them or you don’t, but I think that it’s all in how you prepare and cook them that makes them good or not.

Brussel Sprouts are a great side to sandwiches, wraps, or burgers- we love to make them as a side with our Beyond Meat Burgers along with our oven-roasted potatoes.


Pre-heat oven to 400.

Then, wash your brussels and let them dry as you prepare our pan.

Using a medium sized oven pan, layer with aluminum foil- a trick I learned from my Mom, as it makes cleaning up a lot easier. Remove the potentially crusty, burned, and oily aluminum foil afterward, toss it in the trash, and you still have a perfectly clean pan.

Drizzle with olive oil.  


Now, to cut the brussel sprouts: start with chopping off the bottom (what looks like a root or stem).

Then, if the outer layer of ‘green’ is browned or looks soggy, you can peel those layers away until you reach one that looks clean and edible. It shouldn’t be more than one or two peels.

Don’t worry about the parts that fall off as you cut in half, just keep them with the bunch and add them to the pan. They cook to a crisp and hold a lot of flavor- so they are good to keep!

Cut in half, they should look like this:


Put your brussel sprouts onto your oiled pan, add your choices of spices (sea salt, garlic salt, black pepper, rosemary).

Add 1-2 tsp of fresh lemon juice (optional).

Then toss with hands to coat brussel sprouts with the oil, spices, and juice mixture. Spread them evenly across the pan.


Pop in the oven and roast for 15-20 minutes.

  • brussel sprouts
  • olive oil
  • garlic salt
  • black pepper
  • rosemary
  • lemon juice (optional)


  1. Pre-heat oven to 400.

  2. Drizzle olive oil on medium sized oven pan

  3. Wash, cut brussel sprouts in half

  4. Place half cut brussel sprouts on medium sized pan

  5. Add sea salt, garlic salt, black pepper, rosemary

  6. Add fresh lemon juice (optional)

  7. Mix all in medium sized pan

  8. Roast for 15-20 minutes
