Avocado Toast With Tofu Scramble

Toasted sprouted grain bread topped with mashed avocado and well-seasoned tofu scramble

Servings: 4 slices
Avocado Toast
  • 4 slices Ezekiel Sprouted Grain Bread (or other bread of choice)
  • 1/2 fresh avocado
  • garlic salt
  • nutritional yeast
Tofu Scramble
  • 1 block tofu extra firm
  • 1 tbsp vegan butter earth balance
  • 1 tsp black pepper
  • 1 tsp turmeric
  • 1 tsp paprika
  • 1 tsp salt
  • 2 cloves garlic minced
  • 1 tbsp vegetable broth
Tofu Prep
  1. Press slices of extra firm tofu for 5-10 minutes

Tofu Scramble
  1. Heat a medium sized pan over medium heat with 1 tbsp of butter

  2. Mash pressed tofu slices with a fork to resemble scrambled eggs

  3. Add all spices and stir with fork to coat evenly (it should turn yellow)

  4. Add 2 cloves of minced garlic, stir

  5. Add 1 tbsp of vegetable broth, stir and let cook for 2-3 minutes

Prep Avocado Toast
  1. While tofu scramble cooks, toast slices of bread

  2. Mash avocado and spread on toast

  3. Top with tofu scramble

  4. Add nutritional yeast, garlic salt, and sliced tomato (optional)

Recipe Notes

Longer pressed tofu works better. Keeping the heat at a low-medium will prevent any over cooking or burning.
