Creamy, beety, crunchy and oh, so tasty. This hummus, avocado, dijon, beet, and greens sandwich will leave you wanting more.

Ingredients
  • 2 slices Sprouted Grain Ezekiel Bread
  • 3/4 cup Sliced Beets canned
  • 1-2 tbsp Original Hummus
  • 1-2 tsp Dijon Mustard
  • 1/2 Mashed Avocado
  • 1/2 tbsp Vegan Butter
  • Black Pepper optional
  • Salt (or Garlic Salt) optional
Instructions
  1. On one slice of bread, spread hummus

  2. On other slice of bread, spread mashed avocado

  3. Drizzle (or spread) dijon mustard over hummus


  4. Layer sliced beets over mashed avocado

  5. Add black pepper and salt of choice (optional)

  6. Put sandwich together and butter both outsides of bread

  7. Use fry pan over medium heat (~5 min each side), panini press or toaster oven to toast (~10 min @ 400 degrees)

Recipe Notes

You can also toast bread in a toaster prior to putting the sandwich together if that is the only option you have
