Summer Strawberry Chocolate Pancakes

3 ingredient pancakes combines with fresh strawberries and decadent dark chocolate for a deliciously sweet breakfast

For the Pancakes
  • 2 bananas ripe
  • 1 cup oats rolled, organic
  • 1/4-1/2 cup milk non-dairy
  • 1 tbsp flaxseed optional
  • 1/2 cup strawberries fresh, diced
  • 1/2 cup dark chocolate chips non-dairy
  • 1 tbsp coconut oil
Strawberry Maple Topping
  • 2 tbsp maple syrup organic
  • 1/2 cup strawberries fresh, chopped
  • 1 tbsp water
  1. Blend banana, oats, and milk in blender (start with a small amount of milk and add more as necessary)

  2. Stir in chopped 1/2 cup of strawberries and chocolate chips

  3. Heat a pan with coconut oil over low to medium heat

  4. Pour palm sized batter in the pan and golden brown on both sides

  5. Cook on one side until a spatula can slide under to flip firmly (you can tell by the edges beginning to bubble and get more firm)

Strawberry Maple Topping
  1. In a small saucepan, bring 1 tbsp water with chopped strawberries and 1 tbsp of maple syrup to low-medium heat

  2. Smash strawberries with fork and stir occasionally

  3. Pour over pancakes and enjoy!

Recipe Notes

Strawberry topping is optional, you can always use regular maple syrup
