Light and fluffy cupcakes for any occasion.
Pre-heat oven to 350
Sift cup of flour into a mixing bowl
Add sugar, baking soda, and tsp of salt and mix together
Add non-dairy milk, vanilla, olive oil, and vinegar and mix together
5. Grease with coconut oil OR line cupcake pan with liners
6. Fill 1/2 to 3/4 of the way
7. Bake for 30 minutes
Add powdered sugar, (vegan) butter, vanilla extract, and (non-dairy) milk
Starting on low, mix with an electric mixer, increasing speed until it is smooth
Remove cupcakes from the oven, allowing them to cool sufficiently before adding frosting
If you are not serving right away, refrain from adding berries until you are ready to serve
If your frosting is thin, add more powdered sugar, if it is too thick, add more milk. Do not refrigerate.
