Summer Strawberry Chocolate Pancakes

Pancakes with fresh summer strawberries and decadent dark chocolate come together with a healthy 3 ingredient combination for an almost unbelievable healthy and tasty breakfast.

Strawberries and  Dark Chocolate Pancakes

These pancakes were incredible.

A spin on our simple 3 ingredient pancakes for a fancier feel and to explore some different flavor combinations. It did not disappoint.

Pancakes have this weird stigma, like, this shouldn’t be healthy…but really, it is.

The ripe banana, organic oat, and non-dairy milk combination is pretty sneaky; it’s healthy and sweet.

Pancake Recipe Made Simple

For these pancakes, add 2 ripe bananas, 1 cup of oats, and 1/4 cup of non-dairy milk to a blender for the base.

A lot of things we make wouldn’t be possible without our Ninja Blender. We use it at least once a day, if not twice. Definitely a good investment – especially when you’re ballin on a budget like we are.

You might have to add more milk, but if it’s not mixing right away try removing the blender, shaking vigorously, and mixing again before adding more milk.

The flaxseed is optional, but we found that it made the pancakes a little more fluffy and less dense. Although, it was a little tougher to cook, so note that if you do choose to add flaxseed, the cook time will vary.

Once mixed and no longer chunky, add chopped strawberries and chocolate chips, stirring with a spoon.

At this point I try to scrape the batter off the sides as well to get the most out of the mixture.

When your pan is hot and ready, covered with coconut oil (or cooking spray), pour the batter out into palm-sized circles.

If you’re batter is really thick (which is how we like ours), you can spread it out after you pour to ensure it cooks evenly.

Let cook on one side until a spatula will slide under easily. Flip, then cook on the other side. Ideally, you want both sides to be golden brown.

Strawberry Maple Topping

Usually, one would make a glaze with sugar and fruit, but in light of trying to be healthy, we combined a small amount of water with chopped strawberries and some organic maple syrup in a small saucepan for a strawberry maple topping.

But if you’re like us, and love pancakes practically drowning in syrup, you can always add a little more syrup when eating.

For the Pancakes

  • 2 bananas ripe
  • 1 cup oats rolled, organic
  • 1/4-1/2 cup milk non-dairy
  • 1 tbsp flaxseed optional
  • 1/2 cup strawberries fresh, diced
  • 1/2 cup dark chocolate chips non-dairy
  • 1 tbsp coconut oil

Strawberry Maple Topping

  • 2 tbsp maple syrup organic
  • 1/2 cup strawberries fresh, chopped
  • 1 tbsp water



  1. Blend banana, oats, and milk in blender (start with a small amount of milk and add more as necessary)

  2. Stir in chopped 1/2 cup of strawberries and chocolate chips

  3. Heat a pan with coconut oil over low to medium heat

  4. Pour palm sized batter in the pan and golden brown on both sides

  5. Cook on one side until a spatula can slide under to flip firmly (you can tell by the edges beginning to bubble and get more firm)

Strawberry Maple Topping

  1. In a small saucepan, bring 1 tbsp water with chopped strawberries and 1 tbsp of maple syrup to low-medium heat

  2. Smash strawberries with fork and stir occasionally

  3. Pour over pancakes and enjoy!

Recipe Notes

Strawberry topping is optional, you can always use regular maple syrup
