Tacos? Cauliflower? Oh, yes. Perfectly seasoned and roasted cauliflower inside a warm tortilla with diced red onion, cilantro avocado lime sauce, your choice of salsa, and nutritional yeast come together for a delicious and healthy meal with a Mexican flare.

Here in Atlanta, we love to explore new restaurants. We love to seek out plant-based friendly options that usually sit quietly, unnoticed.

We also love hole in the wall places that make you wonder how they passed sanitation codes because yes, that is where you find the best and most delicious food.

These tacos were inspired by a place called Pure Taqueria. We stumbled upon this place after passing it many, many times. We thought because of it’s location, it would be pretty expensive, so we never bothered to try it, until one day, we did. And we were very pleased.

Not only were their cauliflower tacos incredible, they weren’t super expensive either. Plus, you always know you’re at a good Mexican restaurant when you get free chips and salsa.

These specific tacos were spiced with lots of turmeric and oil topped with a pumpkin seed pesto and spicy cashew sauce.

And so delicious.

Of course, we’re about practical, versatile, quick, and easy over here at Eat Real Shit so we didn’t go as far to re-create these tacos exactly, but we flipped it just how we like it. And they turned out great. We love these tacos!

The first time we had them, we didn’t have avocados, and they were still tasty! But, adding that creamy cilantro avocado lime sauce pushed it up there higher on the scale of tastiness.

So, we highly recommend adding that.

Another option could be a dairy-free sour cream if it suits you. Also, like we said, still good without!

Roasted Cauliflower Tacos

Ingredients

Cauliflower

  • 1 head cauliflower
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tbsp chili powder

Toppings (optional)

  • 1/2 diced red onion
  • 1 diced tomato
  • salsa
  • nutritional yeast

Instructions

  1. Preheat oven to 450

  2. Cut cauliflower into bite sized pieces


  3. On a medium sized oven pan with parchment paper, lay out cauliflower

  4. Pour 2 tbsp of olive oil over and mix to coat evenly

  5. Spread cauliflower across pan evenly, bake for 20 minutes


  6. After 20 minutes, remove from oven and add 1 tbsp of olive oil and spices, stirring with spoon or spatula to coat evenly

  7. Put back in the oven for 10 minutes

  8. Remove and add to a whole wheat tortilla, diced red onion, diced tomato, cilantro avocado lime sauce, salsa, and nutritional yeast
