Plant Based Vanilla Cupcakes With Vanilla Frosting
I made these cupcakes for my Birthday celebration in October, but they really are perfect for any occasion.
The cake was so perfectly fluffy, moist, and spongey. It also didn’t feel heavy or too sugary, which was great.
I topped my cupcakes with fresh sliced strawberries, but it could be great with any other type of berry or plain all by itself.
Instead of making my own frosting, due to lack of time, I purchased Simple Mills Vanilla Frosting which was to die for. It’s light and creamy and is the perfect addition to this cake!
If you choose to use this frosting, note that it should not be refrigerated.
If you’d rather make your own, a delicious homemade vanilla frosting recipe is provided below.
Note: add strawberries (or other choice of berries) directly before serving or enjoying.

- 1 3/4 cup All-Purpose Flour
- 1 cup Sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup non-dairy milk
- 2 tsp vanilla extract
- 1/3 cup olive oil other vegetable oil
- 1 tbsp vinegar white or apple cider
- 3 3/4 cup powdered sugar
- 3 tbsp vegan butter
- 4 tbsp non-dairy milk
- 2 tbsp vanilla extract
Baking the Cupcakes
Pre-heat oven to 350
Sift cup of flour into a mixing bowl
Add sugar, baking soda, and tsp of salt and mix together
Add non-dairy milk, vanilla, olive oil, and vinegar and mix together
5. Grease with coconut oil OR line cupcake pan with liners
6. Fill 1/2 to 3/4 of the way
7. Bake for 30 minutes
Add powdered sugar, (vegan) butter, vanilla extract, and (non-dairy) milk
Starting on low, mix with an electric mixer, increasing speed until it is smooth
Remove cupcakes from the oven, allowing them to cool sufficiently before adding frosting
If you are not serving right away, refrain from adding berries until you are ready to serve
If your frosting is thin, add more powdered sugar, if it is too thick, add more milk. Do not refrigerate.
