Sweet and Savory Breakfast Sandwiches

Breakfast Sandwiches are an American classic. Between a buttery and flaky biscuit you’ll find the perfect combination of sweet and savory.

It’s been a while, internet! I’ve been busy trying to pursue a career in fitness coaching, and for a while was working part-time as a barista so the blog stuff got away from me. Although, I did keep up with the Instagram since being MIA from the blog and that has actually brought me to a few pretty incredible things. I had a few restaurants/vegan spots in Atlanta reach out to me for social coverage and content (AKA free food!) which is literally a dream to me. So I feel like the time has been well spent.

My goal for 2020 is to nurture this website more and try to expand and sure up my entire online presence. I have no clue where this thing is going (maybe nowhere) but I’m loving every second of it so we shall see.

But now, I’m back on with a brand spankin’ new recipe! And it is seriously so easy – and perfect for this Holiday season!

There’s nothing more that I miss in being vegan than the classic American breakfast. As you know, I quickly perfected my tofu scramble because eggs were the last thing I gave up, and I legitimately have it multiple times a week.

A few weeks ago while we were in Huntsville visiting family, my boyfriend suggested making “chicken” and biscuit sandwiches. So, we went to the nearest Publix and got what we thought was just vegan “chik’n” patties from Gardein and a can of Pillsbury biscuits.

But as it turned out, the Chik’n patties were full blown sandwiches with buns already.

Scratch that idea.

The Gardein Chik’n patties were delicious. But it wasn’t what we had planned on making. So, we took the biscuits home with us for another attempt.

Recently, I had seen that Gardein had new breakfast sausage patties in the freezer aisle at Whole Foods, so we picked up a package of those and a package of cheddar Daiya dairy-free cheese to embark, once again, on our breakfast sandwich making endeavor.

And it turned out…

Amazing.

We buttered the biscuits a little bit with Earth Balance vegan butter and added a little strawberry jam.

I could have eaten about 10 of these.

They’re definitely a recipe I’ll be making when I go home for Christmas and New Years.

Sweet and Savory Breakfast Sandwiches

Buttery, flaky biscuits sandwich a delicious meat-free breakfast patty with melty cheese and sweet raspberry jam.

Ingredients

  • 1 can Pillsbury Biscuits
  • 1 pkg Gardein breakfast sausage patties
  • 8-10 slices Daiya Cheddar Cheese
  • 1/2 – 1 cup Raspberry jam optional
  • 1 – 2 tbsp Earth Balance vegan butter optional

Instructions

  1. Bake pillsbury biscuits via instructions on the can

  2. Prepare sausage patties via instructions on the package

  3. Cut biscuits in half, add butter (optional), sausage patty, and a slice of cheese on one side

  4. Put back in the oven on broil for 1-3 minutes (until cheese is melty)

  5. Spread jam on other half of biscuit

  6. Make a sandwich and enjoy
