Chocolate PB Banana Cookie Oatmeal

We must be talking crazy.

And I guess we are, but this is the good kind of crazy. The delicious kind of crazy. And actually pretty healthy kind of crazy.

Oatmeal is an easy meal to prepare meal. It’s really just a foundation for you to build whatever you’re feeling that day.

Versatile. And that’s the beauty of it.

This particular bowl was all about satisfying that sweet tooth, and lately we’ve been obsessed with Biscoff cookies (and by lately I mean we’ve always been obsessed but bought a giant package of them the other day and it’s almost gone) so, of course we added them to our oatmeal AND dipped them in our coffee, simultaneously.

It was the greatest decision of the day.

Besides all of the tasty toppings, let’s talk about oatmeal for a minute.

Oats are full of fiber and protein and is most commonly known for lowering blood sugar and cholesterol levels. They also contain antioxidants: cleansing and detoxifying from the inside with food. This makes it a great option for your first meal of the day.

The other fantastic thing about oatmeal, and oatmeal recipes, is that they are so easy to switch up. You can add just about any toppings you’d like. Like our PB&J Oatmeal recipe.

Biscoff Cookie Oatmeal

Ingredients

Cooking Oats

  • 1 cup rolled oats organic
  • 2 cups non-dairy milk or water
  • 1 dash salt

Toppings (per each bowl)

  • 1/2 banana sliced
  • dash cinnamon
  • 1/4 cup raw walnuts chopped
  • 1 tbsp peanut butter or nut butter earth balance
  • 1/4 cup dark chocolate morsels Enjoy Life Foods
  • 1/2 Biscoff cookie crumbled
  • 1 tbsp organic maple syrup, honey, or agave optional

Instructions

  1. In a small saucepan over medium-high heat, bring 1 cup liquid, 1 cup oats, and a dash of salt to a boil stirring frequently

  2. Cook for 3-5 minutes stirring frequently

  3. Separate into 2 bowls and add toppings
