2 Minute Sauce With Just 4 Ingredients
My Mom had sent me the book Medical Medium, which I highly recommend, because it truly opens your eyes to how and why the foods you eat matter.
In the last few chapters, there is one dedicated to a 28-day food cleanse. I was interested in the kinds of meal options he was going to provide given the content of the rest of the book. So far, it sounded like a lot of fruit and not much more.
But, it wasn’t that at all. It was a lot of raw vegetable meals that sounded really great. In reading through the menu, I noticed he kept referring to a sauce made with avocado, cilantro, and lime, which of course, I had heard of before. It’s popular in Mexican restaurants, especially over some sort of fish taco (which I love), but I had never really considered making it myself.
It stuck with me. Upon finishing the book, we had just (conveniently) picked up a fresh bunch of cilantro from the farmers market. We always have avocados and someone, for whatever reason, decided to get limes.
This sauce was destiny.
I threw the avocado, cilantro leaves, and the juice of half of a lime into our Nutri Ninja Blender, just to see what would happen. Turns out, we had to add at least 1/2 cup of water, if not more. The ninja and other hand held blenders aren’t exactly made for ‘sauce’, but in this case, it works pretty good.
Either way, the sauce turned out great. More than great. We’re obsessed with it, honestly.
We put it over our burrito bowls, breakfast tacos, dip tortilla chips in it, I even picked up a quinoa bowl from the Whole Foods salad bar and topped it with this sauce.
Avocado Cilantro Lime Sauce
This creamy, plant-based, sauce is great for any dish.
- 1 avocado 1/2, and spoon out contents
- 1/4 cup cilantro leaves fresh
- 1/2 lime juice
- 1/2 cup water
- 1 clove garlic minced (optional)
Cut the avocado in half, spooning out contents into blender or food processor
Add 1/4 cup of cilantro leaves
Juice half of a lime and pour in juice
Add minced garlic (optional)
Add 1/2 cup of water
Blend until creamy
Minced garlic is optional. Add more water for creamier sauce.
