We love pasta and we’re really not sorry about it. Pasta is usually categorized as unhealthy, which we don’t completely disagree, but we also know that there are great alternatives out there.
We’re ballin’ on a budget, so vegetable based pasta is our go-to, although we love lentil, chickpea, and black bean pasta because they are a little bit healthier.
You can even go super healthy and try Zoodles instead of pasta in these recipes, or sweet potato noodles. It’s your choice!

This Alfredo sauce has a creamy base from boiled cashews, blended up with tasty spices, Nutritional Yeast, and vegetable broth. The flavor does not disappoint.

Rice noodles are the fastest noodles you’ll ever cook. Drop them in some boiling water for a few minutes and wa-lah! You’ve got noodles ready to go.
This pad thai has a homemade sauce with the perfect combination of salty, from the soy sauce, and sweet from the peanut butter.

Last, but most definitely not least, this one-pot pasta not only makes kitchen clean up easy, it’s flavors are delectable. Nutritional Yeast, vegetable broth, and non-dairy unsweetened milk come together for the perfectly light creamy texture.
But this dish isn’t complete without the garlic butter mushrooms we threw on top. Sautéed in vegan butter and coated in garlic salt, they pair well with the lightness of the pasta.
